其實禾個人不嬲都覺得史雲生ok架, 咩菜要雞湯都係用佢, 效果合自己重口味囉. 唯獨係燉野就真係太鹹太濃了, 蓋哂原材料既清甜原味.
清湯燉獅子頭係屋企菜, 街外一般做法都係先紅燒再燴既, 清燉叫做有啖湯飲下囉
材料: 小棠菜, 肥梅頭, 雞湯

梅頭一定要夠肥, 呢件唔合格既, 有近1/4肥出黎效果最滑(唔夠肥可以加多少蛋白)

先切片, 再切條, 再切粒. 之後手刴. 一定要手刴不能用blender打, 分別巧大呢. 反正呢個係心機菜就比d心機刴啦.

醃料 (230g豬肉計): 生抽1茶匙, 糖1茶匙, 生粉1茶匙, 蛋白1/2隻, 少少鹽, 薑末1-2茶匙 (一定要好似溶哂既薑末, 不可以薑粒), 以同一方向攪拌豬肉直至醃料水份吸收哂, 最後就撻幾下另佢化膠.

每一件獅子頭大概係75g (半斤整4粒), 鐘意大粒d 都可以, 可以上至100g (半斤整3粒). 買豬肉時已經要注意份量. 將撻好豬肉平均分好一份份, 好輕好小心搓至圓形 (怕痴手就用少少生粉水先沾手), 千萬不能搓實個肉團團, 溫柔d please.

同一煲水淥一淥小棠菜 (足夠舖小煲2層既份量), 呢d菜只要d味入湯, 唔食既, 淥一淥除去青澀味
16cm 招積黃出場...舖1層小棠菜, 放上肉團團
