Ad Hoc Club (2) Tomato : 肉醬釀蕃茄 Tomato Stuffed with Meat Sauce



第2次的ad hoc club舉行了, 今次的主題係Yumi建議的"蕃茄", 呢個topic得到好多人的支持, 大家都好有興趣去整蕃茄菜式呢.

蕃茄做主腳一般係前菜/湯比較多, 今次仙女嘗試整一個主菜...會以低溫焗蕃茄, 希望可以更加突出蕃茄的甜, 另外因為蕃茄的"清新"就用濃味肉醬同芝士去夾, 希望有一個合適的平衡. 

Ad Hoc Club (2) : 肉醬釀蕃茄 Tomato stuff with Meat Sauce





材料 (6人份) : 大圓蕃茄6隻 (請不要選擇太熟的否則焗既時候會太易爛, 形狀要大又圓), 橄欖油15ml,  干蔥6粒切碎, 蒜頭3粒切碎, 小紅椒3隻去籽, 免治牛肉150g, 免治豬肉100g, 茄膏30g, 白酒40ml, 紅椒粉, sweet basil 30g, 巴馬臣芝士碎100g, 原味梳打餅1片待用



(1) 以橄欖油炒香干蔥碎+蒜頭碎
 

(2) 加入免治豬肉炒至轉色, 加入免治牛肉再炒.


(3) 加入小紅椒, 茄膏炒. 小紅椒煮完會拎出來棄掉, 所以原隻去籽就得.


(3) 分2次加入白酒, 攪拌, 試味, 加紅椒粉, 略煮5分鐘, 或直至肉醬杰身


(4) 加入basil, 略攪, 熄火. 加入50g芝士碎, 以海鹽+黑胡椒調味, 如果太濕就加入梳打餅碎 (禾今次矛需要加)


(5) 蕃茄切頂, 取出籽棄掉, 釀入肉醬+芝士碎, 一層肉一層芝士


(6) 灑上剩下的芝士碎, 淋上少少橄欖油, 焗盤以錫紙墊好, 每一隻茄都用錫紙"震"住企得令令


(7) 放入已經預熱120度焗爐焗90分鐘


(8) 上碟serve可以另外整一個cheese nest盛裝, 或者只用veggie伴食.

baking paper用碗圈出一個合適size既圈


反轉張baking paper, 滿滿舖上芝士條




想有濃味既芝士兜, 用左呢個3 cheese blend


入已經預熱180度既焗爐, 焗盤一齊預熱 (要小心"扇"張baking paper入盤), 幾分鐘見芝士溶就可以取出



略為放涼, 就可以用薄長刀去"片"起個芝士, 最理想係用"抆CREAM"既刀, 但禾矛就用左麵包刀




之後趁芝士片仲軟身, 放入一個"兜"等佢固定形狀, 入雪櫃15分鐘, 就可以做蕃茄既兜兜啦




唔單止好玩, 包住一齊食仲好好味架.
